BLT Pasta Salad

This BLT pasta salad is great for picnics, parties, BBQ's, or even as an easy work day lunch or dinner.The thing I like most about it is I can make it whenever I have time (usually before the school run) and eat it whenever we are ready. It keeps in the fridge for up to 3 days, so I always make plenty so we can have some for lunch the next day too.

The recipe below makes enough for 4-8 people depending whether you eat it as a main or side.


250g dried pasta (fusilli or penne works well)
200g shredded lettuce
325g tub of baby plum tomatoes
10 rashers of smoked back bacon (or meat free alternative)
130g smoked pancetta cubes (optional)
100-150ml Honey and Mustard salad dressing


1. Start by boiling the pasta for 10-12 minutes until cooked. Be careful not to overcook the pasta, otherwise it will be too soft and not hold its shape. Drain well and set aside to cool.
2. While the pasta is cooking, slice the bacon into strips and fry, along with the pancetta, until it is cooked and beginning to crisp. If using a meat free alternative such as egg plant bacon, fry until cooked. Take off the heat and allow to cool also.
3. Next chop the lettuce and slice the baby plum tomatoes in half, length ways and place in a large mixing bowl.
4. Finally, add the cooled pasta and bacon to the large mixing bowl containing the lettuce and tomatoes, drizzle over the honey and mustard salad dressing and stir well. Keep refrigerated until ready to serve.

Allergy note:
Dairy and soya free.
If you have a gluten allergy you can swap the pasta for a gluten free version
I have found that the some honey and mustard dressings can contain egg (Tesco's does, Asda's doesn't) however the reduced fat version usually doesn't. So if you are looking for an egg free version it is worth checking both options.
